Celery, orange and kidney bean salad
Ingredients:
1 tin kidney beans
1 head celery
1-2 oranges
Large bunch of mint
Olive oil
Salt and pepper
Method:
- Remove the tough outer stalks of celery, then finely slice the rest
- Peel and dice the oranges and finely chop the mint
- Mix together in a bowl with the kidney beans
- Dress with olive oil and season
