
Cider glazed swede
Ingredients:
1 large or 2 small swedes
75g raisins
400ml cider
1tbsp muscavado sugar
25g butter
2 sweet apples
2tbsp cider vinegar
Method:
- Soak the raisins in about 50ml of the cider
- Cut the swede into 2cm chunks and put in the bottom of a heavy bottomed saucepan
- Cover with the remaining cider and add the butter, sugar and a pinch of salt
- Bring to the boil then reduce the heat and simmer until the swede is tender
- Remove the swede from the pan and then boil the remaining liquid until it becomes syrupy
- Thinly slice the apples and add to the syrup with the cooked swede, raisins and cider vinegar
- Stir on the heat for 2-3 minutes, season and serve
